    Moist Muffins with Optional Ingredients

    List of Ingredients




    2 cups all pupose flour
    2 to 3 teaspoons baking powder ( I use 3 )
    1/2 tsp salt or less
    4 tbsp. granulated sugar
    2 large eggs
    3/4 to 1 cup milk
    1 tsp. real vanilla flavor ( optional )
    1/4 cup oil

    Recipe



    Sift dry ingredients into a bowl. In another bowl, whisk wet ingredients smooth. With a fork, stir both mixtures together until moisented. Fill paper lined muffin tins 2/3 full. Sprinkle tops with sugar and some grated nutmeg if desired. Bake in a 375º oven 20 minutes or till tested done.


    VARIATIONS: The basic recipe above is not really sweet. So feel free to add extra sugar to some of these recipes below for added sweetness.

    Banana or pumpkin muffins: add 1/2 cup of puree ( canned pumpkin puree is fine ), may change the sugar
    to all brown sugar, and add 1/4 tsp. cinnamon and 1/4 tsp. nutmeg.

    Cheese muffins: add 1/2 cup grated cheddar cheese to the dry ingredients.

    Oatmeal muffins: replace 1 cup flour with 1 cup quick oatmeal.

    Whole wheat muffins: replace 1 cup flour with 1 cup whole wheat flour.

    Cherry nut muffins: add 1/4 cup chopped nuts to dry ingredients. Stir cherries into the batter.

    Apple or blueberry muffins: add 1/2 tsp cinnamon to dry ingredients and stir in about 1 cup fine chopped apples
    or fresh or frozen ( not canned ) blueberries to the batter.

    Dried Fruit muffins, add 1/2 cup chopped soft: raisins, currants, pitted dates, or prunes, or apricots.
