    Morning Glory Muffins

    List of Ingredients




    2 cups flour
    1 1/4 cups sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    2 cups grated carrots
    1/2 cup raisins
    1/2 cup chopped walnuts
    1/2 cup shredded coconut
    1/2 cup crushed pineapple well drained
    3 eggs
    1 cup oil
    2 tsp vanilla


    Recipe



    Combine all dry ingredients. Add fruits and nuts and mix well. Combine wet ingredients and mix well with mixing spoon. Place in lined muffin tins. Bake in a preheated 350F oven about 20 minutes or tested done. Yield approx 12
