1 lb. smoked chicken, finely diced
1/2 c. finely chopped green onions
3 c. plum tomatoes, seeded and chopped
1 jalapeño pepper, seeded and minced
1 Tbs. balsamic vinegar
Salt and freshly ground black pepper
1 lb. loaf Italian bread
1/3 c. prepared pesto sauce

Pre-smoke the chicken using your favorite method. Cool. Remove chicken meat from bones.
Preheat oven broiler.
Toss chicken with green onions, tomatoes, jalapeño pepper; sprinkle with vinegar and season with salt and pepper, blending well, then reserve.
Cut bread in half lengthwise.
Place cut side up, on a baking sheet. Brush pesto sauce over bread evenly, then toast in preheated oven. Remove from oven.
Top the toasted bread with the chicken mixture.
Cut into small slices and serve immediately. Garnish with fresh basil leaves, if desired.
Place on plate in circular pattern with basil leaves in center.
