    Spinach Roll-Ups

    Recipe Introduction

    If you prefer a meatless or a white sauce type of dish you will enjoy this. Looks like you went to a lot of trouble yet it's an absolutely easy dish to prepare, or prepare ahead of time. Enjoy!

    List of Ingredients

    8 lasagna noodles, cooked
    3 tbsp. butter
    2 pks. spinach, cooked, squeezed
    1/4 cup chopped onion
    1 red pepper, seeded and chopped
    2 cups shredded mozzarella cheese
    3/4 cup ricotta cheese
    3/4 cup parmesan cheese
    1 egg, beaten
    1/2 stick butter
    1/4 cup flour
    1/8 tsp. black pepper
    1/2 tsp. salt
    1 cup milk
    1 cup 1/2 n 1/2


    Recipe

    Preheat oven to 375º.

    Cook noodles until done according to pkg. directions. Cool in bowl of cold water.

    Saute onion and red pepper with 3 tbsp. butter for about 5 minutes.

    Combine spinach, onion & pepper mixture, 1 1/2 cups mozzarella cheese, ricotta cheese, 1/2 cup parmesan cheese and beaten egg. Set aside.

    To prepare sauce: Melt 1/4 cup butter, add flour and pepper. Stir in milk and cream and the rest of the parmesan cheese. Bring to a boil over med-high heat, stirring constantly. Stir until thickened.

    Pat noodles dry. Spread with 1/2 cup of spinach mixture. Roll up jelly-roll fashion. Spread a small amount of sauce in the bottom of a 9x13 greased baking dish. Place rolls on top of sauce. Spoon remaining sauce over rolls. Sprinkle with the rest of the mozzarella cheese.

    Bake 30-35 minutes.
