Skewered Chicken & Pineapple
List of Ingredients
1/3 cup light brown sugar
1/3 cup low sodium soy sauce
1/4 cuo pineapple juice
1/4 cuo fresh lime juice
4 tsp. grated ginger root
1 tbsp. curry powder
6 garlic cloves; minced
1 lb boned and skinned chicken breast, halved and cut into 1" pieces
1 lg red or green bell pepper; cut into 1" cubes
2 cups canned pineapple chunks in juice
3 med. onions, cut into 1" cubes
1 1/2 cups rice
Recipe
Combine first 7 ingredients in a small bowl. Pour mixture over boneless skinless chicken breast cubes and marinate in refrigerator 4 hours or overnight.
Thread marinated chicken cubes, pepper cubes, pineapple chunks and onion cubes alternately onto skewers (remember if they are wooden to soak them first). Place kebabs on grill and cook for 10-15 minutes until chicken is done, turning occasionally.
Cook rice according to package directions. To serve place rice on plate and set a kabob on top.
