List of Ingredients
1 lb pork sausage*
1/2 lb shrimp, chopped
1 can water chestnuts, diced
1-2 large carrots, cooked, chopped fine
5-6 green onions, chopped
salt and pepper
1 small dry onion diced fine
1 raw egg
Accent (optional)
2 packages of lumpia wrappers
Sauce for dipping lumpia:
1/3 cup sugar
4 Tbsp. catsup
1 Tbsp. wine vinegar
2 Tbsp. white vinegar
2 Tbsp. soy sauce
1 Tbsp. cornstarch
Recipe
Cook sausage and sauté onions. Drain cooked sausage thoroughly and chill for about one half hour. Pour into a fairly large bowl. Add green onions, chopped shrimp, water chestnuts, carrot, etc. Add raw egg and mix well.

Bring the first 5 ingredients to a boil and boil approximately 5 minutes. Then add 1 tablespoon of cornstarch and 1/3 cup of water. Cook until it thickens and serve hot.
The outer wrappers of the lumpia can be purchased in most supermarkets or oriental markets.
You should purchase 2 packages of the lumpia wrappers. They are VERY thin. Keep the other wrappers moist while filling each wrapper. Place a wet tea towel over the top of the remaining lumpia while filling each one.. Put the lumpia wrapper in front of you and place about 1 heaping tablespoon of filling in the middle and close to the edge of the wrapper closest to you. Spread it out a bit so the filling is not all in one spot. Start to roll it up. Roll it once, then fold in both sides and finish rolling it. These can be frozen ahead of time. Just place the finished uncooked lumpia on wax paper on a cookie sheet and freeze them. When frozen, place them in a freezer ziploc bag. They are ready to be used and you can take out as many as you need. Figure at LEAST 3 per person. Heat approximately one inch of oil in a fry pan. Brown each lumpia until crispy brown on all sides. Place on paper towel to help absorb any grease. Serve hot.
