    Taco Chicken Salad

    List of Ingredients




    1 tbsp. vegetable oil
    1 lb. boneless, skinless chicken breasts, cut into thin strips
    1 pkg. Taco seasoning mix
    8 cups mixed salad greens
    1 can black beans or kidney beans drained and rinsed
    1 cup shredded cheddar cheese
    1 tomato chopped
    1/4 cup ranch salad dressing
    1/2 cup Thick and chunky salsa
    Tortilla Chips


    Recipe



    Heat oil in skillet over medium-high heat. Cook chicken until no longer pink. Stir in seasoning mix and 1/3 cup water. Reduce heat and cook 5 minutes longer!

    On a large platter arrange greens, black beans, cheese and tomato. Drizzle with ranch dressing. Arrange chicken over salad and spoon salsa around chicken. Crumble the tortilla chips over top of salad!
