    Cranberry Sauce with Apple Juice

    List of Ingredients




    1 quart apple juice
    1/4 cup rice syrup
    1/4 cup maple syrup
    *8 tablespoons of agar flakes
    3 cups raw cranberries
    1 teaspoon cinnamon
    1 lemon, use juice and grated rind
    1 pinch of sea salt

    Recipe



    In a 3 -quart saucepan, mix apple juice with rice syrup, maple syrup, and agar flakes. Bring to a boil stirring the flakes into the juice until the flakes dissolve.

    Add the cranberries and cinnamon while turning the flame down. Cover and cook for about 10 minutes until the cranberries are soft.

    Remove from heat and stir in the lemon juice and rind.

    Pour into a glass bowl or mold and put in the refrigerator; the cranberry sauce should take almost two hours to thicken.


    For more variety, add orange, raisins, apples or nuts to the mixture.

    *If agar flakes are hard to find, substitute arrowroot. (Stir 1/3 cup of arrowroot dissolved in 2/3 cup of apple juice into the cranberries toward the end of cooking time.)
