Stuffed Potatoes
Okay I think this is a meal, but for lack of a better place to post it... it's under snacks because hey, it works for me.
List of Ingredients
6 slices bacon
4 large baking potatoes
1/4 cup butter
1/2 cup whipping cream or 1/2 n 1/2
1 (8 ounce) carton sour cream (I use 4 ounces sour cream and 4 ounces cream cheese instead)
3/4 cup (3 ounces) shredded sharp Cheddar cheese
1/2 cup chopped green onions
3 tablespoons Parmesan cheese
1/2 teaspoon garlic salt
1/4 teaspoon pepper
Freshly chopped chives
Recipe
Place bacon on a microwave-safe rack in an 11 x 7 inch baking dish; cover with paper towels. Microwave at HIGH 5 to 7 minutes or until bacon is crisp. Drain bacon; crumble and set aside.
Scrub potatoes; prick several times with a fork, Place potatoes 1 inch apart on microwave-safe rack or on paper towels. Microwave at HIGH 14 minutes or until done, turning and rearrainging after 5 minutes. Let stand 2 minutes.
Cut potatoes in half lengthwise; carefully scoop out pulp, leaving 1/4 inch thick shells. Combine pulp, butter, and whipping cream in a large bowl. mash until fluffy, Stir in sour cream and next 5 ingredients.
Spoon mixture evenly into potato shell, and place on a baking sheet. Bake at 400 degrees for 10 minutes or until thoroughly heated. Sprinkle with bacon and chives. Yield: 8 servings
