Italian Wedding Soup
List of Ingredients
The first time I had this was while we were visiting some friends up north for Thanksgiving. We had dinner at my friends mom's. She is pure Italian, and when I tasted this I had to have the recipe. I hope you like it.
1 4-5lb. stewing chicken
1/2lb fresh spinach, torn into tiny bits
small meatballs
1 small onion, finely chopped
celery tops and a few center hearts, chopped
1 lb. of Acini di Pepe
I can Italian Stewed Tomatoes
salt and pepper
Romano Cheese
Recipe
Cut up 1 chicken, cover in pot with water,
simmer for 1 hour, meanwhile...
Make small meatballs (bite size)using 1 lb. veal, 1 cup Italian breadcrumbs and 1/2 cup grated parmesan cheese. Keep in refrigerator.
After the chicken is cooked, pull it out and
strain the stock into another pot, put in the vegetables. Bring to boil. Add meat balls and 1 lb. of Acini di Pepe, or other small pasta. Simmer for about a half hour.
Peel the skin off the chicken and separate the meat. Put the chicken meat and 1 can of Italian stewed tomatoes into the soup. Salt and Pepper to taste.
Serve sprinkled with freshly grated Romano cheese.
