Reuben Soup
1 lb. cooked corned beef, diced
1/2 to 3/4 cup sour kraut, add to beef
1 stick butter - melted
1/2 cup flour - add to butter and then heat 3-5 minutes, stirring constantly to cook flour and make a dough.
Stir in:
3 cups cream
2 cups milk - you can use all milk if you don't have cream.
Add: 1 cup diced onion or dry flakes equiv. too.
Increase heat to med. and continue cooking 7-10 mins., stirring constantly until soup thickens.
Add: 1 1/2 cups grated swiss cheese, stir to blend
Add: 3/4 tsp. onion powder
1/2 tsp. white pepper
3/4 tsp. lemon pepper
3/4 tsp. garlic salt
3/4 tsp. celery salt
1/2 tsp. salt
Add: corned beef & sour kraut. Stir until combined.
Makes about 2qts.
