    Lemon Butter

    Recipe Introduction


    Lemon butter is wonderful served on a nice warm scone.


    List of Ingredients


    • 3 eggs
    • 1 cup sugar
    • 5 T. melted butter
    • 2 lemons, rinds and juice


    Instructions


    1. Beat eggs and add sugar. While continuing to beat add butter gradually. Add lemon juice. Stir in rind. Cook on the top of a double boiler until thickened. Can be stored in frig for approx. 3 weeks.
