Delmonico Potatoes
List of Ingredients
5 large potatoes
2 tsp. parsley, divided
2 tsp. salt, divided
1/2 tsp. pepper, divided
2 tbsp. minced onion, divided
2/3 stick butter, divided
16oz. sour cream
1 1/2 cups milk
1 cup shredded Velveeta
Recipe
Boil potatoes in jackets; leave a little hard. Refrigerate overnight. Grate 2 1/2 potatoes for first layer. In small bowl mix: 1t parsley, 1t salt, 1/4t pepper, 1T minced onion, and 1/3 stick butter. Sprinkle over grated potatoes. Mix together sour cream and milk; pour half over potatoes. Top with 1/2c Velveeta. Repeat layers. (Can be frozen at this point, but remember to thaw completely before baking) Bake at 350º for 1 hour.
