    Sweet Potato Pancakes/Eddie's Mashed

    There are actually two recipes here. One is for the sweet potato recipe and the other is for a yummy mashed potato recipe. Why, You ask, because the sweet potato pancakes use a cup of the mashed potato recipe.

    List of Ingredients




    2 Sweet Potatoes, roasted, peeled and chopped
    2 Idaho Potatoes, raw and shredded with the skin on—rinse and drain
    1 Cup Eddie’s Mashed Potatoes (see recipe below)
    2 Eggs
    1 cup Medium Cheddar Cheese, shredded
    1 tablespoon Granulated Garlic
    1 cup Chives, chopped

    Recipe



    Mix the above in a bowl. Make small cakes from the mixture.

    Dredge potato cakes in seasoned flour, egg wash and bread crumbs, then fry.

    EDDIE’S MASHED POTATOES

    3 pounds Yukon Gold Potatoes
    1 cup Sour Cream
    1/2 cup Heavy Cream
    1 pound Butter
    1 tablespoon Worcestershire Sauce
    1/2 cup Roasted Garlic, finely chopped
    2 teaspoons Salt
    1 teaspoon Pepper

    Cook potatoes in boiling water until soft; drain. Add remaining ingredients; mash.
