    Cherry Bourbon Cake

    List of Ingredients

    2 C. butter
    2 C. granulated sugar
    6 eggs
    1/3 C. maraschino cherry juice
    3 C. all-purpose flour
    1 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. mace
    1/2 tsp. salt
    1/2 C. bourbon
    1 (16 oz.) jar maraschino cherries, drained and halved
    2 C. chopped nuts
    2 T. bourbon

    Recipe

    Cream butter with sugar; add eggs, one at a time, and beat well. Add 1/3 cup maraschino cherry juice drained from a 16 ounce jar of maraschino cherries.

    Sift together dry ingredients. Add the 1/2 cup bourbon to creamed mixture alternately with dry ingredients. Fold in maraschino cherries and nuts. Bake in greased and floured 10-inch tube pan at 325ºF for 1 hour and 40 minutes (check after 1 hour and 20 minutes).

    Pour the 2 tablespoons bourbon over cake while still warm. Store in tightly covered container.
