    Double Chocolate Mint Cake

    List of Ingredients

    Cake:
    1 cup flour
    1 cup sugar
    1/2 cup margarine
    4 eggs
    16-ounce can chocolate syrup

    Mint Cream Layer:
    2 cups confectioner's sugar
    1/2 cup margarine
    1 tablespoon water
    1/2 teaspoon mint extract
    3 drops green food coloring

    Chocolate Topping:
    4 tablespoons margarine
    1 cup chocolate chips

    Recipe

    Combine all the cake ingredients and bake in a 9 x 13-inch pan at 350 for 25-30 minutes. When cake is cool freeze it for at least 3 hours. In a bowl combine all ingredients for the mint cream layer and spread on the frozen cake layer. Freeze for another hour. In a glass bowl combine the margarine and chocolate chips for the frosting. Microwave for a minute or 2 and mix well. Spread the frosting on top of frozen mint layer. Keep cake frozen until about 20 minutes before you are ready to serve it. Serves 8 to 10.
