    French Mocha Pie

    Filling
    1 cup sugar
    1 teaspoon instant coffee powder
    2 teaspoons cocoa powder
    4 egg whites
    1/2 teaspoon cream of tartar
    1/2 cup crushed Ritz crackers (about 12)
    2/3 cup ground walnuts

    Mix sugar with coffee and cocoa. Beat egg whites with tartar until soft peaks. Gradually add sugar mixture to beaten whites, beating until stiff. Fold in crackers and nuts. Pour into lightly buttered 9" pie pan. Bake 300 degrees for 30 minutes. Cool and add topping.

    Topping:
    1/2-1 square semi-sweet chocolate
    1 tablespoon sugar
    1/3 teaspoon instant coffee powder
    2/3 teaspoon cocoa powder
    1 cup heavy cream (whipped to soft peaks).

    Mix sugar with coffee and cocoa powders, add to whipped cream. Pour as pie and garnish with semi-sweet chocolate shaving chips.

    I got this recipe from a restaurant in Bethesda, Md., many years ago. It is one of the most delicious I have ever eaten.
