Lemon Blueberry Custard Pie

1 (9-inch) unbaked pie crust
1 tbsp butter
2/3 cup sugar
2 tbsp All-Purpose flour
3 tbsp lemon juice
1 tbsp grated lemon zest
2 egg yolks
1 cup milk
2 egg whites
1-3/4 cups fresh blue berries
Recipe
Preheat oven to 350 ºF.
In a large bowl, cream butter. Mix in flour, lemon juice and lemon zest. beat in egg yolks, then milk. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Gently fold into lemon mixture. Pour filling into pie crust. Scatter blueberries evenly over the top of pie. Bake 30 minutes, or until filling is set. Allow to cool slightly before serving.
