No Sugar Added Apple Pie

Recipe Introduction
�This pie is as �easy as pie� to make and delicious even with no added sugar.�Note: if you need to make the pie ahead, cover and chill it after the standing time. To reheat, place each slice on a microwave-safe plate and cook in microwave oven on 100 percent power (high) for 15 to 20 seconds or until warm.
List of Ingredients
Baked Pastry Shell
1/2 cup apple juice or water
2 tablespoons quick-cooking tapioca
8 cups peeled and thinly sliced Golden Delicious Apples (about 3 pounds)
1 tablespoons butter
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Frozen whipped dessert topping thawed, or frozen vanilla yogurt (optional)
Recipe
In a small bowl, combine apple juice or water and tapioca; let stand for 15 minutes.
In a large saucepan, combine apples, tapioca mixture, butter, cinnamon and nutmeg. Cook covered, over medium-low heat for 20 to 25 minutes or until apples are tender, stirring occasionally. Spoon filling into baked pie shell.
Let stand for 1 hour and serve warm. If desired, top with whipped topping or frozen yogurt. Or, cover and chill before serving.
