Oatmeal Cake

1 cup quick cooking oats
11/2 cups boiling water
1/2 cup unsalted butter
1 cup granulated sugar
1 cup light brown sugar, packed
2 tablespoons water
2 large eggs
11/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
Recipe
Lightly grease and flour 9-inch round or square cake pan. Set aside.
Place oatmeal in ceramic mixing bowl. Pour boiling water over oatmeal. Allow to stand for 20 minutes. Cream butter and sugars until light and fluffy.
Beat in 2 tablespoons water and eggs. When well combined, stir into oatmeal mixture. Beat until well mixed. Mix in flour, baking soda and cinnamon.
Pour oatmeal batter into prepared pan. Bake in a preheated oven at 350 for 30 minutes or until toothpick inserted in center comes out clean and cake is golden.
Remove from oven. Add a caramel or nut frosting if desired and serve.
