Cake:
1 cup butter
2 cups sugar
5 eggs
1 teaspoon vanilla
3 1/2 cups cake flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
Icing:
2 cups sugar
1 cup water
1/4 cup white Karo Syrup
3 egg whites, stiffly beaten
1 teaspoon vanilla
1 fresh coconut, grated
1 small can pineapple, crushed and drained
1 cup chopped pecans
1 small bottle maraschino cherries, chopped in small pieces
Recipe
Cake:
Cream butter and sugar until light and flufy. Ad eggs one at a time, beating well after each addition. Blend in vanilla.
Sift flour, baking powder and salt together and then add alternately with the milk, blending thoroughly.
Pour batter into 3 or 4 (9-inch round greased and floured cake pans. Bake at 350º for 25 to 30 minutes or until cake test done.
Icing:
Boil sugar, water and syrup together until it spins a thread. Pour slowly and in a very thin stream over stiffly beaten, but not dry egg whites, beating constantly. Beat until stiff enough to hold its shape. Blend in vanilla, then add coconut, pineapple, pecans and cherries. Spread immediately on cake.
Note: you may also use a seven minute frosting instead of the cooked frosting: however the cooked frosting will hold it’s shape on the cake until it is all eaten.
