    White Christmas Pie

    Filling:

    Soften 1 envelope of gelatin in 1/4 cup water

    Meanwhile cook until thickened:

    1/2 cup sugar
    4 tablespoons flour
    1/2 teaspoon salt
    1-1/2 cup milk

    Recipe

    Add softened gelatin and cool until partially thickened. Add 3/4 teaspoon vanilla and 1/4 teaspoon almond flavoring. Beat 3 egg whites and 1/4 teaspoon cream of tartar. Add 1/2 cup sugar. Whip 1/2 cup cream and add to egg whites. Whip the gelatin mixture and add to egg white mixture. Add 1 cup coconut and 1/3 cup finely chopped Maraschino cherries, which have been drained on paper towels. Pour into baked pie shells. Chill 2-3 hours or overnight. Makes two 8" pies.

    Pie crust:
    2 cups flour
    1 teaspoon salt
    2/3 cup plus 2 tablespoons Crisco

    Put flour and salt into a bowl and cut in the Crisco. Sprinkle 4-5 tablespoons of water, 1 tablespoon at a time, mixing until moistened. Roll out and place into two 8" pie pans. Prick bottom and sides with a fork. Bake 475 degrees, 8-10 minutes. Cool. This recipe has been a family favorite for years and is always requested for the holidays.
