    Raspberry Nut Diamonds

    Recipe Introduction

    These cookies are rolled out and cut directly on the baking sheet. They can be cut into whatever shapes desired and there is no need to separate them before baking.

    List of Ingredients

    1/2 recipe Master Butter Cookie Dough
    1/3 cup seedless raspberry jam
    1/2 cup finely chopped hazelnuts or almonds

    Recipe

    Preheat oven to 350°.

    On large ungreased baking sheet, roll dough out to ¼-inch thickness. Spread dough with jam and sprinkle with nuts, patting them on very lightly. Using a long, sharp knife or pizza cutter, cut diamond-shaped bars by slicing diagonal lines through dough.

    Bake 15 to 17 minutes, or until pale golden. Cool 2 minutes on baking sheet. Recur the diamond shapes to separate them into cookies. Transfer cookies to wire racks to cool completely.
    Makes 8 dozen
