    Tropical Blondies

    List of Ingredients

    Makes 3 dozen
    Source: WD Holiday Cookies
    2 cups sweetened flaked coconut
    1 can (8 ounces) crushed pineapple
    1/2 recipe Master Butter Cookie Dough
    1 cup sugar
    1/4 cup lightly beaten egg whites
    1 cup white chocolate chips
    1 cup macadamia nuts
    1/2 cup confectioners' sugar
    1 tablespoon fresh lime juice

    Recipe

    Preheat oven to 350°. Lightly grease and flour a 9x13 inch pan.

    In another shallow baking pan, spread coconut out in a single layer. Bake 5 to 8 minutes, or until partially toasted, stirring occasionally. Set aside to cool slightly.
    Using a sieve, drain pineapple and gently press out excess juice. In large bowl, at medium speed, beat dough, granulated sugar, egg whites, toasted coconut and drained pineapple until blended. Add white chocolate chips and nuts; mix until thoroughly combined. Spread batter in prepared pan.

    Bake 35 to 40 minutes, or until pale golden and a toothpick inserted in center comes out clean. Cool completely in pan on wire rack.

    In small bowl, whisk together confectioners' sugar and lime juice. Drizzle glaze over top of cooled blondies; let glaze set. Cut into 36 bars.
