    French Crullers

    List of Ingredients

    1/4 cup sugar
    1/2 tsp. Salt
    1/4 cup shortening
    1-cup water
    1 cup sifted flour
    3 eggs
    1 tsp. Vanilla


    Recipe

    Combine sugar, salt, shortening and water in heavy saucepan and heat. When briskly boiling, add flour all at once, stirring vigorously with a wooden spoon.

    Beat until mixture forms a smooth ball, which leaves sides of pan clean.

    Place in a bowl. Beat in thoroughly one egg at a time, and then continue beating until mixture is smooth and shiny and breaks off when spoon is raised. Add vanilla. Chill.

    Force through a pastry tube in the shape of rings onto strips of oiled wax paper.

    Carefully turn the paper upside-down so that the crullers will drop into deep hot fat.

    Fry at 380F until golden brown on all sides. Drain. Cool. Brush with confectioners’ sugar icing. Makes 10 crullers.
