    List of Ingredients

    1 pkg. (181/4 oz.) yellow cake mix
    3 pkgs. (3.4 oz.) instant vanilla pudding mix
    4 cups cold milk
    1-1/2 tsp. vanilla or coconut extract
    1 pkg. (8 oz.) cream cheese, softened
    1 can (20 oz.) crushed pineapple, drained
    2 cups heavy cream, whipped and sweetened
    2 cups flaked coconut, toasted

    Recipe

    Mix cake batter according to package directions. Pour into 2 greased 13-by 9-inch baking pans, evenly distributed. Bake at 350 degrees for 15 minutes or until done. Cool completely.

    In large mixing bowl, combine pudding mixes, milk and extract; beat for two minutes. Add cream cheese and beat well. Stir in pineapple.

    Spread evenly over cooled cakes. Whip cream until peaks are fluffy; spread over cakes. Sprinkle with toasted coconut. Chill for at least two hours. Enjoy (and have one in the freezer for later!).
