Rose Petal Jam

Recipe Introduction
For maximum flavor use fragrant roses, preferably red or deep pink.
List of Ingredients
2 c. water
1 c. fresh, organically grown rose petals, white heel removed
4 c. sugar
1/4 c. cider vinegar
3 oz. liquid pectin
1/2 c. chopped fresh, organically grown rose petals, white heel removed paraffin
Recipe
Bring water to a boil and pour it over the rose petals. Steep, covered, until cool. Strain, pressing out all the liquid.
In a non-aluminum saucepan, combine this herbal infusion with the sugar and vinegar. Bring to a boil over high heat, and as soon as the sugar has dissolved, stir in the pectin. Return to a rolling boil, stirring, and boil for exactly 1 minute. Remove from heat, and skim off any foam.
Stir chopped petals into the jelly and pour into jars. If petals do not stay suspended, stir occasionally until the jelly thickens enough to hold them. Seal with a thin layer of paraffin. To store for more than 4 months, process in a hot-water bath according to the jar manufacturer's instructions.
