    Jerk Burgers with Pineapple Salsa

    Caribbean jerk sauce has plenty of heat and spice and is now readily available in supermarkets.

    List of Ingredients

    SALSA
    2 teaspoons vegetable oil
    1/4 cup minced onion
    1/4 cup minced red bell pepper
    1 cup minced green bell pepper
    1 teaspoon minced ginger
    1 can (8 oz.) crushed pineapple in juice, drained
    1/4 cup apple jelly
    1 tablespoon fresh lime juice
    Pinch salt

    1 pound ground beef
    3 tablespoons prepared jerk sauce, divided
    1 cup shredded Monterey Jack cheese
    4 hamburger rolls, split

    Recipe

    1. Make salsa: Heat oil in saucepan over medium heat; add onion, bell peppers and ginger. Cook 3 minutes. Add remaining salsa ingredients; cook until jelly melts.

    2. Heat grill. Mix beef with 1 tablespoon jerk sauce in bowl. Shape into four 1/2-inch-thick patties. Grill over medium-hot coals 5 minutes. Turn; brush with remaining 2 tablespoons jerk sauce. Grill 5 minutes more, until an instant-read meat thermometer reaches 160 degrees F. for medium when inserted 1 inch from edge of each burger.

    3. Divide cheese on roll bottoms; top with burgers and salsa. Cover with tops of rolls. Makes 4 servings.


    Quick And Easy Jerk Sauce
    1 c Chopped green onion
    1/4 c Unsweetened lime juice
    2 tb Dark molasses
    2 tb Soy sauce
    2 tb Freshly chopped ginger root
    2 lg Garlic cloves peeled and crushed
    2 Jalapenos stemmed and seeded
    1/2 ts Cinnamon
    1/4 ts Allspice
    1/4 ts Nutmeg
    1/8 ts Dried tarragon

    Puree all ingredients in food processor or blender. Serve over beef, chicken, pork, or lamb.
