    Pork Chops with Apricot Sauce

    List of Ingredients

    Makes 2 servings
    1/4 cup apricot or peach preserves
    1 clove garlic, minced
    11/2 teaspoons soy sauce
    1/2 cup orange juice
    1 teaspoon cornstarch
    2 boneless pork chops, 3/4-inch thick
    Vegetable oil

    Recipe

    For sauce, combine preserves, garlic and soy sauce in a small saucepan. Heat until sauce boils. Blend together orange juice and cornstarch; blend orange juice-cornstarch mixture into preserves mixture. Cook, stirring constantly, until mixture bubbles and thickens. Cook and stir 2 minutes more. Remove from heat and keep warm.

    Heat skillet over medium-high heat. Brush chops lightly with oil. Brown chops on each side; pour half of the sauce over chops. Cover tightly, reduce heat to low and cook 5 to 6 minutes or until chops are done and reach 160 degrees on a meat thermometer. Serve chops with remaining sauce.
