Vegetable cooking spray
6 boneless, skinless chicken breast halves (4 ounces each)
1 large onion, sliced
2 cloves garlic, chopped
1 tablespoon flour
3 medium tomatoes, chopped
1/2 teaspoon dried marjoram leaves
1/4 teaspoon dried thyme leaves
1-inch piece cinnamon stick
1 1/2 cups orange juice
2 teaspoons grated orange rind
3 large carrots, cut into 1-inch pieces
3 medium potatoes, unpeeled, cubed
Salt and pepper, to taste
Recipe
Spray large skillet with cooking spray; heat over medium eat until hot. Cook chicken over medium heat until browned about 5 minutes on each side. Arrange chicken in 12-by-9-inch glass baking dish. Spray skillet with cooking spray; add onion and garlic and sauté until tender, 5 to 9 minutes. Stir in flour, cook over medium heat 1 to 2 minutes. Add tomatoes, marjoram, thyme and cinnamon stick; sauté 1 to 2 minutes. Add orange juice and rind to skillet; heat to boiling. Reduce heat and simmer, uncovered, 5 minutes. Arrange carrots and potatoes around chicken; pour orange juice mixture over. Bake, covered, at 350 degrees until chicken is tender, about 30 minutes. Season to taste with salt and pepper.
