Crust:
1 cup Jiffy Baking Mix
1/4 cup soft butter
1/4 cup powdered sugar
Filling:
2 tablespoons Jiffy Baking Mix
2 eggs Beaten
1 cup sugar
3 tablespoons lemon juice
1/4 teaspoon lemon rind
1 tablespoon powdered sugar
Recipe
Preheat oven to 350º.
Mix crust ingredients together until crumbly. Press into bottom of an ungreased 9x9” pan. Bake for 20 minutes.With electric mixer, beat eggs on high until foamy. Add sugar, baking mix, lemon juice and rind. With electric mixer, beat 1 minute.
Remove baked crust from oven and pour lemon mixture over crust. Bake for about 25 minutes. Remove from oven, cool, dust with powdered sugar and cut in bars.
