1/2 cup plus 1 tablespoon butter (or margarine)
1 3 ounce package cream cheese
1 cup plus 2 tablespoons sifted all purpose flour
1/4 teaspoon salt
Recipe
Preheat oven to 350.
Blend together 1/2 cup butter, cream cheese, flour and 1/4 teaspoon salt until mixture can be shaped into a ball. Cut dough in half. Divide each half into 12 small balls. Press each ball over bottom and up sides of tiny 1 1/2 inch diameter muffin pans, to make a shell.
Filling
1 egg
2/3 cup brown sugar - packed
1/4 teaspoon vanilla
1 1/4 cups chopped walnuts
1/4 cup chopped raisins
1/2 teaspoon grated orange rind
1/4 teaspoon salt
Beat egg with sugar, 1/4 teaspoon salt, 1 tablespoon butter and vanilla. Stir in 1 cup walnuts, raisins and orange peel. Spoon into prepared pans and sprinkle tops with remaining walnuts.
Bake on lowest oven rack for about 25 minutes. Cool in pans.
