1 lge sweet onion, thinly sliced
2 tbsp melted butter or olive oil (I used the butter)
2 tbsp cider vinegar or white wine (I used the white wine)
6 medium potatoes
1 1/2 cups of milk, heated
1tsp salt
1/4 tsp pepper

Preheat oven to 425°. Line a small rimmed baking sheet with foil or spray with nonstick cooking spray. (I just spray my cast iron fry pan & used that)
In a bowl, toss onion, butter & wine until coated. Spread out unto baking sheet, roast in oven until golden brown & soft, stirring occasionally. About 20 minutes.
Meanwhile, peel & quarter potatoes. Cover with cold water & cook till fork tender. Drain & return to low heat for 2 minutes to dry, shaking pan occasionally.
Set aside 1/3 of the roasted onions, chop remaining onions. Mash the potatoes while gradually adding the milk. (I add a couple of tbsp of butter to this as well) Stir in chopped onions, salt & pepper. Serve potatoes sprinkled with reserved onions.
