1 tablespoon olive oil
1 large onion, chopped fine
1 teaspoon mild curry powder
1/2 cup parsnips, small dice
1/4 cup carrot, small dice
1/2 cup turnip, small dice
1/2 cup celery root, small dice
1 cup cauliflower, chopped
1/4 cup leeks, white part only, chopped
Salt and pepper
1 cup white bread crumbs
1/4 cup melted butter

Heat oil in a large pan and sauté onion until soft
Sprinkle curry powder over the onion and mix until well-blended. Add the carrot, parsnip, turnip and celery root to the onion, and toss over high heat for 2 minutes.
Add remaining vegetable and cook another 2 minutes. Remove from heat, season with salt and pepper and stir in half of the bread crumbs.
Lay filo on a clean work surface, and using one sheet at a time, spread butter on filo using a pastry brush, sprinkle with bread crumbs and top with another sheet. Repeat process four times.
