    Salmon Party Log

    Source of Recipe

    Recipe Introduction

This was a favorite of mine for many years.

    1 pound can salmon
1 package cream cheese (8 oz)
    1 tablespoon lemon juice
    2 teaspoons onion -- grated
    1 teaspoon horseradish
    1/4 teaspoon liquid smoke
    1/2 cup pecans -- chopped
    3 tablespoon parsley -- chopped

Drain and flake salmon removing skin and bones. Combine salmon with next six ingredients. Mix thoroughly and chill several hours. Combine pecans and parsley. Shape salmon mixture into 8 x 2-inch logs and roll in nut mixture.

Judi's note: I use to make this quite a bit when I entertained in California. It has been many years since this has graced my table, but it was always a hit with company.

Makes 1 huge log or 2 small ones.
