Shrimp with Garlic

1 pound medium-size shrimp
2 tablespoons butter
2 tablespoons olive oil
4 scallions -- finely chopped
2 garlic cloves -- finely chopped
1 teaspoon sweet paprika
1/2 teaspoon dried oregano
1 tablespoon lemon juice
1 tablespoon dry vermouth
8 cherry tomatoes -- halved and seeded
2 tablespoons fresh dill or parsley -- chopped
Peel and devein the shrimp. Cut in half lengthwise.
Heat the butter and oil in a frying pan. When bubbling, add the scallions, and garlic and cook, stirring, for 2 minutes. Add the paprika, oregano, lemon and vermouth and cook for 2 minutes longer. Add the shrimp and cherry tomatoes and cook for 3 minutes, stirring constantly.
Remove from the heat and sprinkle the fresh dill or parsley over the shrimp. Serve at once with crusty bread.
Judi's Note: This is delicious and always goes over well
at a dinner party.
