Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups flour -- sifted
2 teaspoons baking powder
1/2 teaspoon baking soda
salt -- to taste
1/4 teaspoon sugar (up to 1/2)
12 tablespoons butter
1 cup sweet potatoes -- freshly cooked and
-- mashed (you can use canned
-- here, but it is not as good)
1/3 cup heavy cream (approximately)
Preheat the oven to 450 degrees.
Sift together the flour, baking powder, baking soda, salt, and sugar into a mixing bowl. Add the butter and cut it in with a pastry cutter until it has the texture of coarse cornmeal. Stir in the mashed sweet potatoes. Add the cream, a little at a time, stirring. Add only enough to make a soft dough.
Roll out the dough on a lightly floured board to 1/2-inch thickness. Cut the dough into rounds using a 2-inch biscuit cutter. Arrange the biscuits close together but not touching on a lightly greased baking sheet. Place in the oven and bake for about 15 minutes, or until lightly browned.
