1/2 cup shortening
3/4 cup sugar
2 eggs
1/2 cup milk
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
rind & juice of 1 lemon
1/3 cup sugar
3 teaspoons lemon juice
Cream shortening and sugar, till light and fluffy. Beat in eggs one at a time beating well after each addition. Sift together flour, salt and baking powder. Add milk and flour alternately to creamed mixture blending well after each addition. Blend in juice with one of the milk additions and the rind with the dry. Pour the batter into greased loaf pan. Bake in a 325 degree F. oven for 1 hour. When cake is removed from the oven, pour over a mixture of the remaining juice and sugar. Let cool slightly then remove from pan.
Judi's Notes: The recipe does not specify what size pan to use, I would use an 8x4-inch loaf pan here.
