Cinnamon Raisin French Toast with Maple Apple Topping
2 eggs
2 egg whites
3/4 cup low-fat milk
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
8 slices cinnamon raisin bread* -- cut diagonally
-- in half
1 teaspoon unsalted butter
1 tablespoon maple syrup
2 medium apples -- sliced thin
-- (about 3/4 lb total)
2 tablespoons water
4 tablespoons sliced almonds
*(80 calories per slice)
Preheat oven to 350 degrees F. Coat 13 x 9-inch baking pan with cooking spray.
Whisk eggs, egg whites, milk, sugar, vanilla extract, and cinnamon in medium bowl. Pour into prepared pan. Arrange bread slices in pan and press gently to help soak up liquid. Cover with foil and bake 10 more minutes, or until bread is firm and lightly browned.
Coat skillet with cooking spray and place over medium heat. Add butter and syrup when skillet is hot and swirl to combine. Add apples and water. Cover and simmer until apples are soft, about 10 minutes. Uncover and simmer 1 more minute or until most of the liquid evaporates.
Serve 4 French toast triangles with one-quarter of the apple mixture and 1 tablespoon of the almonds.
