Puffy Apple Pancake

1 1/4 cups milk
4 eggs
1/3 cup granulated sugar
plus
2 tablespoons granulated sugar
3/4 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 tablespoons butter or margarine
2 Granny Smith apples -- peeled, cored,
-- cut into 1/4-inch
-- thick slices
confectioners' sugar

Preheat oven to 425 degrees F.
Whisk together milk, eggs, 1/3 cup granulated sugar and vanilla. Whisk in flour, salt, cinnamon and baking powder until smooth. Coat 10-inch ovenproof skillet with cooking spray; pour in batter. Bake 20 minutes or until puffed and golden around edges.
Meanwhile, in nonstick skillet over medium heat, melt 1 tablespoon butter. Stir in 1 tablespoon granulated sugar; add half of apples. Cook until lightly browned, 2 minutes per side. Remove from skillet; reserve. Repeat with remaining butter, granulated sugar, and apples. Arrange apples on hot pancake. Sprinkle with confectioners' sugar, if desired.
