    Banana-Applesauce Cake

    Amount Measure Ingredient -- Preparation Method

    2 1/2 cups all purpose flour
    2 cups sugar
    1/2 teaspoon baking powder
    1 1/2 teaspoons baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
    1/2 teaspoon ground allspice
    3/4 teaspoon salt
    1/2 cup water
    1/2 cup vegetable shortening
    1 cup applesauce
    1 cup mashed ripe banana*
    2 eggs
    1/2 cup chopped nuts or
    3/4 cup raisins
    confectioners' sugar

    Mix first 8 ingredients well in a large bowl of electric mixer. Add water and next 3 ingredients. Blend, then beat at medium speed until creamy. Add eggs and beat 2 minutes at medium speed. Stir in nuts and raisins and pour into 13 x 9 x 2-inch pan lined on bottom with waxed paper.

    Bake in preheated moderate oven (350 degrees) about 45 minutes. Turn out on cake rack and peel off paper. Turn right side up and while still warm, sift confectioners' sugar lightly over top.

    *NOTE: For 1 cup mashed banana, mash 2 medium bananas with fork or potato masher (do not whirl in blender).
