Peppermint Fudge

1 1/2 teaspoons butter
3/4 cup butter
3 cups sugar
3/4 cup whipping cream
10 ounces vanilla or white chips -- up to 12
7 ounces marshmallow creme
3 teaspoons peppermint extract
5 drops red food coloring
3/4 cup crushed peppermint candy
Grease a 13x9 pan with 1-1/2 teaspoons butter.
In a heavy sauce pan combine the sugar, cream, and remaining butter. Stirring continuously on low heat until sugar is dissolved. Bring to a boil for 4 minutes. Remove from heat and stir in chips and marshmallow creme until smooth. Remove 1 cup of the mixture and set aside. Add color, extract, and 1/2 cup of the crushed candy to the sauce pan. Mix thoroughly.
Pour into the prepared pan. Drop the reserved mixture into the pan. Using a knife swirl the white and pink together. Refrigerate until set.
