Zucchini Pudding

4 cups zucchini -- grated
1 onion -- grated
2 cups baking mix -- (like Bisquick)
1 tablespoon onion powder
1/2 teaspoon garlic powder
salt
pepper
parsley
4 eggs
1/4 pound margarine -- melted
corn flake crumbs
Prepare zucchini and onion in food processor. Place in large mixing bowl. Add baking mix, onion and garlic powder, salt, pepper, and parsley. Mix gently, then add eggs and margarine. Mix completely. Spray a 9x13 pan with nonstick cooking spray.
Add mixture and bake in 350 degree F. preheated oven for 1 hour. Let stand 10-15 minutes before cutting into squares.
