Chicken Juarez

3 tablespoons chili powder
1 tablespoon ground cumin
3 tablespoons tomato paste
2 garlic cloves
2 tablespoons lime juice
1 chicken -- cut into quarters
1 onion -- thinly sliced
In a bowl, mix together the chili powder, cumin, tomato paste, garlic, and lime juice. Rub the paste over the chicken. Cover and chill at least 4 hours.
Place each chicken quarter and slices of the onion on a square of foil. Fold into a package and seal the edges. Bake in a moderate oven (350 degrees F.) for 1-1/2 to 2 hours. Allow your guests to open the individual chicken packets at the table.
Makes 4 servings.
