    Chicken Romano with Garlic Butter Lemon Sauce

    8 chicken breast halves -- skinned, boned and
    -- and gently pounded to flatten.
    garlic powder
    8 slices prosciutto ham (thin)
    8 slices Mozzarella cheese (thin)
    SEASONED CRUMBS:
    3/4 cup bread crumbs
    1/4 cup flour
    1/2 cup Parmesan cheese -- grated
    2 teaspoons garlic powder
    2 teaspoons paprika
    1 teaspoon salt
    GARLIC BUTTER LEMON SAUCE:
    1/2 cup butter (1 stick)
    2 garlic cloves -- put through a press
    2 tablespoons lemon juice
    1 teaspoon parsley flakes

    Sprinkle chicken with garlic powder. Place one slice of ham and cheese over each half of breast. Roll up and secure with a wooden toothpick. Roll chicken in Seasoned Bread Crumbs and place in a baking pan.

    Bake in a 325 degree oven for 20 minutes. Now, baste with Garlic Butter Lemon Sauce. Continue baking for another 30 minutes, basting now and again (use all the sauce) or until chicken is cooked. Serve at once.

    FOR CRUMBS: Combine the ingredients in a plastic bag and shake until blended. Store unused crumbs in the freezer. Can be kept for several months and very good to use with fish or chicken.

    FOR GARLIC BUTTER LEMON SAUCE: Heat together all the ingredients until butter is melted. Use to baste on chicken. Yields about 1/2 cup sauce.

    Note: Entire dish can be assembled earlier in the day and refrigerated. However, please bake this just before serving.
