6 chicken thighs -- skinned
salt -- to taste
black pepper -- freshly ground
2 tablespoons oil
2 garlic cloves -- minced
1 large onion -- chopped
1/2 cup chicken broth
tomatillo sauce -- Arriba; or
- other green sauce
6 slices Monterey jack or
6 slices Swiss cheese
6 cooked rice servings
Season chicken with salt and pepper. Brown in oil on one side. Brown other side and add the garlic and onion. Drain excess oil and add chicken broth to skillet. Put 1 heaping teaspoon tomatillo sauce on each piece of chicken and stir more sauce, to taste, into broth.
Cover and simmer until the sauce thickens slightly, about 15 minutes and the chicken is done (this may take a little more time than stated here). Two minutes before serving, top each piece with a slice of cheese. Serve on a bed of rice.
