Recipe Introduction
Helen Jolly (Grandma Helen as everyone called her) was a remarkable woman who I met while on the Prodigy Food Board. We developed a great friendship while she was there. Helen contributed hundreds of great recipes and some that I have tried have never let me down. If you see a Helen Jolly (Grandma/Helen) recipe while browsing the net don't hesitate to try it. Many people feel the same way I do. Helen is no longer with us, but she is always present with me as I look through my recipe database.
I have not tried this recipe, but many have and they all give it thumbs up.

Pumpkin Bars

Amount Measure Ingredient -- Preparation Method

1/2 cup margarine
1 cup sugar
1 cup brown sugar -- packed
1 can pumpkin (1 lb)
2 teaspoons vanilla
4 eggs
1 1/2 cups flour -- unsifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 1/2 teaspoons pumpkin pie spice
1 cup nuts -- chopped
***CREAM CHEESE FROSTING***
8 ounces cream cheese -- softened
1/2 cup butter or margarine
1 1/3 cups powdered sugar
1 teaspoon vanilla
1/2 cup nuts -- chopped
Preheat oven to 350 degrees. Melt margarine; stir in sugars, pumpkin, vanilla and eggs. Beat well. Stir in remaining ingredients, until well mixed.
Pour into a greased 10x15-inch jelly-roll pan. Bake 20 to 25 minutes. Cool completely, and frost with Cream Cheese Frosting.
For frosting: Mix all ingredients except nuts together. Spread on cooled cake. Sprinkle chopped nuts over top. Cut into bars.
