RLD: Amazing Almond Bars

Recipe Introduction
These cookies look great on a holiday cookie tray. They taste great too./jmp
1 cup butter
3/4 cup sugar
2 large egg yolks
1 teaspoon vanilla extract
1/4 cup almonds -- finely ground
2 1/4 cups flour
1 egg -- lightly beaten
1/3 cup semisweet chocolate -- melted
2 tablespoons unsweetened shredded coconut
Heat oven to 350 degrees F.
Using electric mixer on medium speed, beat butter and sugar 2 minutes. Add yolks, vanilla extract and almonds. Beat 30 seconds. Reduce speed to low. Add flour; beat 30 seconds, or just until dough forms.
Shape dough into 1/4-inch balls. On floured surface, roll out each ball into 2 1/2-inch log.
Chill 15 minutes. Place logs on lined baking sheet; coat with egg.
Bake 8 minutes or until light golden brown; let cool. Dip ends of each cookie in chocolate; place on lined baking sheet. Sprinkle with coconut. Let sit until chocolate is set.
Prep time: 20 minutes
Total time: 30 minutes, plus chilling and setting time.
