LMB: Smoky Spiced Lamb Chops

1 medium yellow onion -- sliced in rings
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon ground coriander
4 large lamb chops
1 red bell pepper -- seeded and sliced
1 yellow bell pepper -- seeded and sliced
1/2 cup chicken broth
or
1/2 cup beef stock
kosher salt
black pepper
Use a 4-quart cooker. Put the onion rings into the bottom of your crock.
In a small bowl, combine the spices. Rub the spice mixture on all sides of the lamb chops, and nestle the chops on top of the onion. Toss bell peppers on top. Pour the broth over. Cover and cook on low for 7 to 8 hours or on high for 4 to 6 hours. Season with salt and pepper to taste and serve with rice or quinoa.
