VEG: Bourbon Braised Onions

2 tablespoons butter
2 tablespoons olive oil
6 onions -- thinly sliced on the vertical
1 teaspoon salt
1/2 teaspoon black peppercorns -- cracked
1/4 cup bourbon
1/4 cup vegetable, chicken stock, or water
In a large skillet over medium-high heat, melt butter with oil. Add onions and cook, stirring, until onions begin to turn golden, about 5 minutes. Add salt, peppercorns, and bourbon and cook, stirring, until bourbon almost evaporates, about 3 minutes. Add stock and stir well.
Transfer to slow cooker stoneware. Cover and cook on low for 6 hours or on high for 3 hours.
Vegan Alternative: Substitute an equal quantity of olive oil for the butter.
Tip: The author suggests using a 2 to 3-1/2 quart crockpot.
Makes 6 servings
